CHARLESTON, W.Va. – Barbecue is a subjective food. Depending on where you’re from in the United States, “barbecue” can have different meanings – and totally different tastes.
In North Carolina, meats are drowned in a vinegar- and mustard-based sauce, while in Texas, they prefer a sweet and spicy tomato-based sauce. In Kansas City, barbecue is served tangy and thick with a ketchup-based sauce. In Memphis, the meats are glazed with a sweet and thin tomato sauce – or rubbed dry with spices and served with no sauce at all.
Each West Virginian has their own opinion about what makes a good, quality barbecue. And while we can no longer get our pulled pork at McDonald’s Bar-B-Que (the original name for the Golden Arches), we can enjoy some from our own local barbecue joints on this National Barbecue Day.
